Weigh-in Wednesday: Week 8 of My Weight Loss Journey

Welcome back to My 12 Weight Loss Challenge! Each week, I’m sharing the nitty gritty details of my weight loss journey right here. Weigh-in Wednesday: Week 8 of My Weight Loss Journey

Several of you have sent me emails inquiring about what I am eating each day to consistently loose weight over the long haul. I am a creature of habit, so I tend to eat the same things over and over again….this can be a good thing or a bad thing! If you follow me here on Instagram, you are probably tired of seeing my food stories! 🙂

I have been eating a TON of fruits….namely strawberries. They are very filling, low in calories (zero fat!) and in season right now. Apples are also high on the list.

The past two weeks I’ve been making Strawberry Vanilla Protein Smoothies for breakfast, which are soooo good. I totally do not feel like I am “dieting” when I have these!

Lunch: I’m not a huge lunch fan. Never have been. I just don’t like feeling super full midday. So, my lunch is either a turkey sandwich (whole wheat bread, low fat mayo, no cheese to keep my fat grams in check) OR a BBQ or taco salad.

For those of you that are curious, my BBQ Chicken Salad is literally shredded chicken that soaks in a rich barbecue sauce, a sprinkling of cheddar cheese, tons of crispy lettuce, and a healthy drizzling of barbecue sauce in lieu of salad dressing.

My taco salad is made with the same base chicken recipe, except I add taco sauce, a scant handful of crushed tortilla chips, a teensy bit ‘o cheese, and maybe a few jalapeños over mounds of lettuce.

Suppers: I’m eating with my family each night – no special meals just for me. I think it is important that I enjoy family meals without deprivation but with some moderation. We’ve also had a lot of shrimp lately! I indulged in Simple Southern Fried Shrimp with Southern Hushpuppies on Sunday. But, if it is NOT your cheat day or you just want something lighter, Summer Shrimp Skewers are easy enough to make for a weeknight supper!

And yes, as you learned here in Week 6, I am eating carbs! This past week, I missed 2 days in a row with exercising. Exercise and watching fat grams have been big for my weight loss consistency.

Ok, enough about food….it’s really early (6:21AM) and my Strawberry Vanilla Protein Smoothie is calling my name.

When I got on my scale this morning, I was down .5 pounds! But guess what? I’m totally A-Ok with this half a pound loss. I am still loosing weight each week!!

Up next: Weigh-in Wednesday after a holiday weekend! 🙂 Geeezzzz. The 4th of July is SO much fun, and I will  make sure to share with you next Wednesday what I ate on the big day!
