A party favorite all year long, these Buffalo Chicken Pinwheels can be made in advance and are PACKED with flavor! Don’t worry….you can adjust the heat to customize them for your fans.

The Playbook for Buffalo Chicken Pinwheels

Buffalo Chicken Pinwheels come together so quickly and easily.

PRO TIP: Plan ahead! These need time to chill in the fridge before slicing.

Mini food processor chops cooked chicken for Buffalo Chicken Pinwheels.

Now, the first step (pictured above) is optional. You can chop your chicken with a knife, however we like the chicken really finely chopped so I use my mini food processor to make it easy! This mini processor is perfect for quick and easy meal prep. Chop herbs, vegetables, and cheese with ease!

Next, use a handheld mixer to whip the cream cheese in a mixing bowl until it is smooth and fluffy.

Fun fact! The mixer in the pic below was a bridal shower gift from the hostesses waaaaay back in 1994! To say it is a workhorse & well made is an understatement! (You can check it out on Amazon here. )

Mix the ingredients together per the recipe, and spread the mixture on your tortillas. Then, roll ’em up!

Here’s the important tip…..wrap the tortilla rolls in plastic wrap and refrigerate prior to slicing. This will ensure clean slices and not a sloppy mess of the mixture going everywhere! You can wrap them individually or group them together like I did in this photo.

Buffalo Chicken Pinwheels

These easy appetizers can be made in advance for tailgate parties, pot lucks, and entertaining!

Equipment

  • Plastic Wrap

Ingredients
  

  • 1 block cream cheese softened
  • 1/4 cup buffalo sauce
  • 1/4 cup ranch dressing
  • 2 cups cooked chicken, shredded or chopped
  • 5-6 flour tortillas burrito size
  • 1 cup shredded cheddar cheese
  • 1/4-1/2 cup green onions, washed & chopped

Instructions
 

  • Place cream cheese, ranch dressing, and buffalo sauce in a large bowl. Mix with a handheld mixer until ingredients are incorporated.
  • Add chicken, cheese, and green onions to the mixture and stir well.
  • Lay a tortilla on a flat surface and spoon chicken mixture in the center and spread towards the edges. Roll up tortilla, wrap in plastic wrap, and refrigerate 1-3 hours. Remove wrap, slice & serve!
  • PRO TIP: Make sure you refrigerate the pinwheels prior to slicing! This steps solidifies the ingredients so cutting is easier.
